Use Yeast Nutrient to give your yeast a boost.  Diammonium Phosphate (DAP) is a good source of nitrogen for your yeast and will add nitrogen to keep the yeast active during fermentation. A nitrogen source commonly used to help promote yeast health. Brewers use Diammonium Phosphate (DAP) to increase the production and growth of yeast used for fermenting. Works great with white wines and meads as well, providing natural nutrients that might be missing.

How much DAP should I add to beer?
  • Diammonium Phosphate (DAP) Yeast Nutrient can be added directly to the wort during the boil.
  • Add 1/2 gram per gallon (1/2 tsp per 5 gallons) of Diammonium Phosphate (DAP) Yeast Nutrient to the wort. 
  • Barely a pinch is all that should be added to a yeast starter. 
DAP in Winemaking:
 
DAP is the main source of added nitrogen in wine fermentations and is the primary ingredient in Yeast Energizer.  During fermentation, the wine yeast will utilize the nitrogen of Diammonium Phosphate (DAP) to keep a strong fermentation going.  Wine yeast needs nitrogen to work.
 
How much Diammonium Phosphate (DAP) should I add to wine?
  • Let the fermentation start on its own.
  • Add 1/2 gram per gallon (1/2 tsp per 5 gallons) of Diammonium Phosphate (DAP) Yeast Nutrient to the must.  More can be added if the fermentation slows.
  • To assure good mixing of DAP you should disperse them in water prior to adding to the must. Use distilled water to avoid changing the mineral balance in your wine.
Store in a cool, dry and odorless place. Protect from humidity.
